Cauliflower is rich in fiber, vitamin C, and antioxidants, which can help aid digestion and reduce inflammation. It’s perfect for this time of year or any time of year!

Ingredients
• ½ tablespoon of extra virgin olive oil
• 2 cloves of garlic, minced
• 1 white onion, diced
• 1 head cauliflower, diced
• 32 ounces organic vegetable broth
• ½ teaspoon thyme
• 1 teaspoon salt
• 1 teaspoon black pepper

Garnish Options
• Fresh parsley
• Sliced green onion
• Chives
• Roasted chickpeas

Instructions: In a large pot, warm olive oil over medium heat. Add onion & garlic (good for the heart) and cook until translucent—do not burn your garlic! Then add cauliflower and vegetable broth, and bring to a boil. Then cover & simmer for about 20 min. or until cauliflower has softened. Pour contents into a blender and add salt. Blend until your preferred consistency. Garnish as you please and bon appetite!
